Sardine Couscous Recipe

Couscous from São Paulo is a popular summer recipe for barbecues, birthdays and picnics. Ingredients for making Sardine Couscous:

 1 cup cornmeal

 3 cans of sardines

 1 can of corn or pea

 1 unit of chopped medium onion

 1 unit of small tomato cut into slices or strips

 ½ unit of chopped red pepper

 2 cups of water (480 milliliters)

 ½ cup of tomato pulp

 2 tablespoons of chopped parsley

 2 tablespoons of oil or olive oil

 garlic paste

 Black pepper

 salt

How to make Sardine Couscous:

To prepare this couscous from São Paulo, the first step is to heat a pan with the oil. When hot, saute the onion and bell pepper for 3 minutes, or until wilted.

Then add the tomato pulp, sardines, corn or peas and water. Season with salt, pepper and garlic paste to taste, mix and cook until boiling, to refine the flavors.

Tip: Reserve some sardines and peas to decorate the couscous.

To finish, add the cornflour at once and keep stirring, until it absorbs all the liquid and comes off the pan. Turn off the fire.

To decorate the sardine couscous, place the tomato, sardine and reserved peas on the bottom in a round mold with a central hole and grease. Add the previous mixture and press to make it compact. Allow to cool or warm.

After the previous step, the sardine couscous is ready to be unmold and served! Serve with a fresh salad, and good appetite!
