Puba Cake Recipe

But what is puba and how is puba made? Puba is a mass extracted from cassava roots, has a texture similar to tapioca and slightly sour flavor when raw. In this easy homemade cake recipe the puba completely replaces the wheat flour and does not go with cow's milk or butter, so this is a gluten-free and lactose-free cake. To make it fluffier, we recommend whipping the egg whites into snow and gently mixing in the dough.

Ingredients for making puba cake:
500 grams of puba (cassava pasta)
3 cups of sugar (480 grams)
1 glass of coconut milk
3 eggs
2 tablespoons of margarine
1 tablespoon of baking powder
How to make puba cake:
Start by separating the yolks and whites. Beat the egg whites in snow and, in another bowl, beat the yolks with the margarine and sugar until light and fluffy.
Tip: Add a pinch of salt to the egg whites to make them rise faster. Sift the yolks to avoid the egg taste and smell.
Add the puba to the egg, margarine and sugar mixture and mix well. Add the coconut milk and mix again until the dough is smooth, without lumps.

Little by little, add the beaten egg whites in the dough and in delicate movements, so as not to lose air and get a fluffy puba cake. Finally mix lightly in the yeast in the dough, place in a greased and floured cake tin and bake in a preheated oven at 180ºC for 40 minutes or until golden.
Tip: In this recipe, a 22 cm cake pan without a hole in the middle was used.
